Mince the meat, without trimming the fat off, and mince the ham. Add the shallots, season with salt and pepper, and pour the stock over the meat. Generously butter a gratin dish, spread the meat in a smooth layer. Follow the instructions to prepare the flaked mashed potatoes, season with salt, pepper and nutmeg, add the remaining butter. Cover the meat with the potato purÄe, sprinkle with the grated cheese. Preheat the oven for 15 minutes on 350-410 F, and bake the shepherd╒s pie until the top is brown and piping hot. Plan to cook for about 30 minutes.
